Ingredients

– 1 tsp olive oil
– 140g tofu, chopped into cubes (I use The Tofoo Co Naked Tofu from Tesco)
– 1 onion, sliced
– 1 red pepper, sliced
– 2 garlic cloves, sliced
– 250g pineapple, chopped into small chunks
– 1 & a ½ tbsp of 50% less sugar ketchup
– 2 tbsp of white wine vinegar
– 1 tbsp light soy sauce (I use Kikkoman less salt soy sauce from Tesco)
– 120g basmati rice
• 6g sesame seeds

Method

1. Heat the oil in a pan on a medium to high heat. Add the tofu and fry until slightly golden.

2. Add the onion, pepper & garlic and fry until slightly softened.

3. Add the pineapple, ketchup, white wine vinegar & soy sauce and mix altogether. Reduce the heat and simmer for 30 minutes.

4. Cook the rice according to the packet instructions.

5. Once the rice is cooked, drain and half the mixture into two bowls.

6. Sprinkle the sesame seeds over each dish and serve immediately.
