Ingredients

– 1 tsp rapeseed oil
– 1 red onion, sliced
– 1 ½ tbsp balsamic vinegar
– 100g baby spinach, chopped
– 2 garlic cloves, crushed
– Sprinkle of fresh thyme leaves
– 250g passata
– 80g soft goats cheese
– X4 Beetroot wraps (I use Genius fibre wraps from Tesco)

Method

1. Heat the oil in a pan on a medium heat. Tip the onions, 3 tbsp of water and balsamic vinegar into the pan and cover with a saucepan lid. Cook for 15 minutes, stirring a few times in between. Replace the lid quickly to keep the moisture.

2. Place the onions onto one side when the 15 minutes are up. Add the spinach, garlic & thyme leaves into the pan and fry on a low heat until the spinach has wilted.

3. Pre heat the oven to 180 degree heat. Lay the wraps on the side, spread the passata evenly onto each wrap (leaving the outer edges). Add the spinach, garlic & thyme leaves first, followed by the onions. Scatter the goats cheese over each wrap last of all. Place the wraps onto a sheet of tin foil and place in the oven for 5-10 minutes until the edges are slightly crisp

4. Serve immediately
