Ingredients

– 90g vermicelli noodles
– 1 tsp marmite
– 1 tsp olive oil
– 50g chestnut mushroom, sliced
– 1 leek, sliced
– 1 red chilli, finely chopped
– 2 tbsp light soy sauce
– 30g cashew nuts
– 4g sesame seeds

Method

1. In a jug, mix the Marmite with 600ml of boiling water and set aside while you cook the vegetables

2. Heat the oil in a large pan or wok on a medium to high heat, then add the mushrooms, leek and chilli and fry for 10-15 mins until softened, then add the soy sauce and Marmite mixture and stir. Bring to the boil for 5 mins

3. Cook the noodles according to instructions. Drain and add to the vegetable mixture. Reduce the heat, add the cashew nuts and simmer for 5 mins

4. Serve in two separate bowls and sprinkle the sesame seeds evenly
