Sweet & sour chickpeas

A healthy but tasty sweet and sour dish! Containing your 5-a-day! A very filling quick and easy recipe!

Ingredients

• 1 tbsp olive oil
• 1 onion, chopped
• 1 green pepper, chopped
• 50g baby spinach
• 2 garlic cloves, sliced
• 400g tin of chickpeas, drained
• 250g pineapple, chopped into small chunks
• 1 & a ½ tbsp of 50% less sugar ketchup
• 2 tbsp of white wine vinegar
• 1 tbsp light soy sauce (I use Kikkoman less salt soy sauce from Tesco)
• 120g basmati rice
• 350g fresh broccoli, cut into small florets
• 6g sesame seeds

Method

1. Heat the oil in a pan on a medium to high heat. Add the onion, pepper, spinach & garlic and fry until slightly softened.

2. Pour in the chickpeas and fry for 5 mins. Add the pineapple, ketchup, white wine vinegar & soy sauce and mix altogether. Reduce the heat and simmer for 30 minutes.

3. Cook the rice according to the packet instructions. For the last 10 mins steam the broccoli on a medium heat.

4. Once the rice is cooked, drain and half it into two bowls followed by the broccoli and chickpea mixture.

5. Sprinkle the sesame seeds over each dish and serve immediately.
