Banana & chocolate pancakes

Sweet and fluffy healthy pancakes! The perfect Sunday breakfast, or if you’re fancying something sweet for tea!

Ingredients

• 80g oats
• 1 banana, chopped
• 200ml unsweetened koko milk
• 1 scoop (35g) of vegan protein powder, I use mint choc chip from Bulk powders
• ½ tsp baking powder
• ¼ tsp baking soda
• 1 tbsp coconut oil or olive oil
• 1 tbsp maple syrup (I use Clarks original 45% less sugar)
• 40g Vego chocolate spread (optional), I buy from Holland & Barrett

Method

1. Place the oats, banana, milk, protein powder, baking powder and baking soda into a food blender and blend until smooth

2. In a shallow none stick frying pan add a small amount of oil on a medium to high heat and pour some of the mixture into the pan, cook for a couple of mins each side until browned and crispy!

3. Repeat for the rest of the batter, it should make 8 pancakes altogether! Once cooked divide the pancakes between two plates and pour the maple syrup on top followed by the chocolate spread!
