Strawberry pancakes

A high in protein but low in calorie dish! Perfect for a filling breakfast!

Ingredients

• 2 eggs
• 2 scoops (60g) of strawberry protein powder, I use whey protein
• 100ml unsweetened koko milk
• 1 tsp baking powder
• ¼ tsp baking soda
• 4 drops of pink food colouring (optional) I use Dr. Oetker Extra strong pink food colour gel
• 1 tbsp olive oil
• 2 tbsp maple syrup (I use Clarks original 45% less sugar)
• 80g strawberries, chopped

Method

1. In a jug pour in the cracked the eggs, the protein powder, koko milk, baking powder, baking soda and give everything a good mix. Add 4 drops of the food colouring and mix well until the mixture is pink.

2. In a shallow none stick frying pan add a small amount of oil and spread over the base of the frying pan. On a medium to high heat pour a small amount of mixture into the pan and cook for a couple of mins each side until browned and crispy!

3. Repeat for the rest of the batter, it should make 3 small pancakes altogether! Once cooked divide the pancakes between two plates and pour the maple syrup on top followed by the strawberries!
