Nacho halloumi bake

Ingredients

• 30g pitted green olives, halved
• 1 red onion, finely sliced
• 14 cherry tomatoes, chopped
• 2 garlic cloves, crushed
• 1 tsp oregano
• 1 tsp olive oil
• Pinch of salt & pepper
• 100g cool tortilla crisps
• 60g halloumi, thinly sliced
• 60g reduced fat mozzarella, grated
• 2 tbsp 50% less fat crème fraiche
• 2 tbsp mild dip salsa
• 2 tbsp guacamole (I use mild Old El Paso)

Method

1. Heat the grill to a medium heat. In a bowl add the olives, red onion, cherry tomatoes garlic, oregano and oil and mix everything together.

2. Spread half of the crisps in a baking tray or shallow baking dish and spoon over half of the tomato mixture and half of the halloumi. Top with the rest of the crisps, tomato mixture and halloumi. Sprinkle over the mozzarella and grill for 8-10 mins. Serve with the dips in the centre of the dish!
