Veggie sloppy Joes

Ingredients

• 160g red split lentils
• 250ml low salt vegetable stock
• 250ml boiling water
• 1 tsp olive oil
• 1 white onion, diced
• 2 garlic cloves, crushed
• 1 green pepper, diced
• 400g tinned tomatoes
• 1 tbsp brown sugar
• 1 tbsp marmite
• 1 tsp chilli powder
• 1 tsp ground cumin
• 1 tsp smoked paprika
• Pinch of salt & pepper
• 4 sweetcorn cobettes
• 2 brioche buns
• ¼ red onion, sliced

Method

1. Place the lentils into a large saucepan with the veg stock, boiling water and bring to the boil. Boil for 10 mins. Reduce the heat and simmer for 12 mins.

2. Meanwhile in a large frying pan or wok add the oil on a medium heat and fry the onion, garlic and pepper for 5 mins. Pour in the tinned tomatoes, sugar, marmite, chilli powder, cumin and smoked paprika and give everything a good stir.

3. Once the lentils are cooked, drain and add them to the wok, stirring everything once again. Season with salt and pepper and simmer for around 10 mins. At the same time fill a small pan with water, bring to boil and add the sweetcorn, boil for 8-10 mins.

4. Lightly toast the brioche buns and serve the lentil mixture on top with the red onion and the corn on the cob on the side
