Lentils & baked feta

A delicious quick and easy Greek dish! High in protein and bursting with flavour!

Ingredients

• 200g feta cheese
• 1 tbsp mango chutney
• 150ml 0% fat Greek yoghurt
• Small handful of mint, finely chopped
• 1 tsp olive oil
• Pinch of salt & pepper
• 250g Puy lentils (I use Merchant Gourmet ready to eat from Tesco)
• ½ cucumber, sliced and halved
• 120g cherry tomatoes, halved

Method

1. Pre heat the oven to 200 degrees. Place the feta in an oven proof dish and spread over the mango chutney on top. Bake for 15-20 mins until sticky.

2. In a bowl mix the yoghurt, mint, olive oil and 1 tbsp of water to make a dressing and season with salt & pepper.

3. Cook the lentils in the microwave according to the pack instructions. Once cooked, in a bowl toss the lentils, cucumber and tomatoes together, then divide between two plates. Top with the feta cheese and drizzle the yoghurt dressing over.
