Spicy squash & mozzarella bake

A beautiful simple dish that’s low in calories and quick and easy to make!

Ingredients

• 360g butternut squash, peeled & cut into small chunks
• 200g cherry tomatoes, halved
• 2 tbsp tomato puree
• ½ tsp chilli flakes
• Pinch of salt and pepper
• 100g reduced fat mozzarella cheese, grated
• 50g golden breadcrumbs

Method

1. Pre heat the oven to 200 degrees. Fill a large pan with water and bring to the boil. Add the squash and boil for 6-7 mins until tender. Drain and transfer to an oven proof dish.

2. In a bowl mix the cherry tomatoes, tomato puree, chilli flakes and season with salt & pepper. Then spoon over the squash. Mix the mozzarella and breadcrumbs and sprinkle over the tomatoes. Bake for 20 mins until golden.
