Vegetable egg fried rice

Ingredients

• 1 tsp rapeseed oil
• 3 spring onions, thinly sliced
• ½ red pepper, deseeded and thinly sliced
• 1 garlic clove, crushed
• ½ broccoli floret, cut into small florets
• 150g basmati rice
• 90g frozen peas
• 2 small eggs, lightly beaten
• 1 tsp soy sauce
• 1 tsp sesame seeds
• Pinch salt & pepper

Method

1. Cook the rice according to instructions, this should take around 25-30 mins

2. For the last 5 mins until the rice is cooked, using a large wok, add the oil on a medium heat and fry the spring onions and pepper for 2 mins. Stir in the garlic and broccoli alongside 4 tbsp of water then turn up the heat slightly. Simmer for 2 mins or until the water has evaporated.

3. Add the rice and mix through, then stir in the peas.

4. Stir in the soy sauce into the beaten eggs using a fork, then add the egg mixture to the rice and stir fry for 2-3 mins. Stir in the sesame seeds and season with salt & pepper. Serve immediately.
