Ingredients

• 1 tsp olive oil
• 1 small onion, diced
• 1 tsp oregano
• 400g tin chopped tomatoes
• Pinch of salt & pepper
• 120g ricotta
• 100g reduced fat mozzarella, grated
• 30g vintage cheddar cheese, grated
• 30g pecorino, finely grated
• 150g uncooked rigatoni pasta

Method

1. In a large saucepan or wok add the oil on a medium heat and fry the onions for 4-6 mins. Sprinkle in the oregano and cook for a further minute. Pour in the tinned tomatoes and season with salt & pepper. Reduce to simmer.

2. Cook the pasta according to instructions. For the last 5 mins before the pasta’s cooked, add in all of the cheeses into the tomato mixture and stir until the cheeses have melted. Drain the pasta, then transfer over in the cheese mixture and give everything a good mix. Serve immediately.
