Spicy aubergine & lentil coconut curry

Ingredients

• 1 tbsp olive oil
• 1 onion, chopped
• 2 garlic cloves, sliced
• Thumb size piece of ginger, finely grated
• Puy lentils (I use Merchant Gourmet ready to eat from Tesco)
• 1 aubergine, cut into small chunks
• 1 tsp sesame seeds
• 1 tsp ground turmeric
• 1 tsp chilli powder
• 400ml Tesco light coconut milk
• 1 tbsp Tamarind paste
• Pinch of salt & black pepper
• 240g wholegrain rice
• Handful of fresh parsley, chopped

Method

1. Heat the oil in a large pan or wok on a medium heat and fry the onion, garlic and ginger for 5 mins until softened. Add the lentils and aubergine and cook for a further 2 mins.

2. Mix in all of the spices and stir well, fry for another 2 mins. Tip in the coconut milk, tamarind paste and 200ml of boiling water. Season with salt & pepper and reduce to simmer for 25-30 mins, stirring occasionally.

3. Whilst simmering, cook the rice according to instructions.

4. Serve in four separate bowls with a sprinkle of parsley on top.
