Broccoli & brie frittata

The perfect low calorie, high in protein dish! Great as an evening meal or breakfast!

Ingredients

• Broccoli, cut into small florets
• 1 tbsp olive oil
• 2 garlic cloves, crushed
• 1 onion, diced
• 4 eggs, whisked
• Pinch of salt & pepper
• 60g brie, chopped into small chunks

Method

1. Cook the broccoli by either steaming or boiling (I prefer to steam for 8 mins) or if boiling do this for 5 mins. Drain well and leave to one side.

2. Heat the oil in a shallow frying pan on a medium heat. Fry the garlic and onion for 5 mins until softened. Toss in the broccoli and reduce the heat.

3. In a large bowl, whisk the eggs, season with salt & pepper, add in the broccoli and onion and mix well. Pre heat the grill on a medium heat.

4. Tip the mixture back into the frying pan on a medium heat (make sure the pans cooled down otherwise the egg will cook too quickly) and spread out evenly. Cook gently until the bottom of the mixture is set, this should take around 10 mins. Dot around the brie and place under the grill until golden and bubbling.
