A super easy tasty dish! Perfect for a mid week family meal! Not only is it low in calories but it also contains 4 of your 5-a-day!
1. Pre heat the oven to 180 degrees. Place the chopped potatoes into a large oven proof dish and drizzle over 1 tbsp of oil, coating all of the chips. Sprinkle the salt & pepper over the chips and give everything a good mix using your hands. Place in the oven for 20 mins.
2. Remove the chips from the oven and flip each chip over. Add the broccoli, pepper and onion and drizzle another tbsp of oil on top of the vegetables followed by the thyme. Place back into the oven for a further 25 mins, stirring the vegetables halfway through.
3. Remove the chips from the oven and sprinkle over the mozzarella and red leister and place back into the oven for 5 min more mins.
