Cheesy pasta bake

Ingredients

• 335g baby plum tomatoes
• 1 onion, sliced
• 240g reduced fat mozzarella, sliced into quarters
• ½ tsp olive oil
• ¼ tsp rock salt
• ½ tsp black pepper
• 1 tsp garlic powder
• 1 tsp dried oregano
• 4 garlic cloves, sliced
• 300g rigatoni pasta
• 60g ricotta
• 2 tbsp tomato puree
• Handful fresh basil, chopped
• 40g vintage cheddar cheese, finely grated

Method

1. Preheat the oven to 180 degrees. In a large oven dish add the tomatoes and onions and mix altogether. Spread out the mozzarella quarters and pour the oil over the veg and cheese. Sprinkle the salt, pepper, garlic powder and oregano on top and place into the oven for 10 mins

2. Remove from the oven and sprinkle over the fresh garlic and place back into the oven. In a large saucepan cook the pasta according to instructions. After 8-10 mins drain the pasta and transfer back into the saucepan, followed by the ricotta cheese and tomato puree. Reduce to a low heat and slowly stir through until everything is mixed together.

3. Remove the dish from the oven and give everything a good mix. Transfer over the pasta into the oven dish as well as the fresh basil and mix everything together once again. Sprinkle over the cheddar cheese on top and place back into the oven for 5 mins until the cheese has melted.

4. Serve in 4 separate bowls!
