Creamy sausage & spinach pasta

A quick and easy, super tasty pasta dish! High in protein and low in fats!

Ingredients

• 1 tsp olive oil
• 1 red onion, chopped
• 4 veggie sausages, chopped (I use Plant chef Cumberland sausages from Tesco)
• 2 garlic cloves, crushed
• 150g dry Rigatoni pasta
• 90g ricotta cheese
• 2 tbsp 0% fat Greek yoghurt
• 10g yeast extract
• 50g baby spinach
• Pinch salt & pepper

Method

1. In a large non-stick frying pan or wok, add the oil on a medium heat and fry the onions for 4 mins. Whilst you’re frying the onions, cook the pasta according to instructions. After the 4 mins is up toss in the sausages and garlic in with the onions and fry for a further 6-8 mins. Add a splash of water to the pan if needed.

2. Once your pasta is cooked, drain and return back to the pan on a low heat. Add the ricotta cheese, Greek yoghurt and yeast extract and give everything a good stir.

3. Transfer the pasta into the wok as well as the spinach and give everything a mix once again. Season with salt and pepper and serve into two separate bowls.
