Crispy salt & pepper tofu

Ingredients

• 120g brown rice, boiled
• 280g tofu, drained and cut into small cubes (I buy from Tesco)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp Chinese five spice
• 10g yeast extract (optional)
• 2 tbsp cornflour
• 1 tbsp olive oil
• 2 spring onions, chopped
• 2 pinches of sesame seeds

Method

1. Cook the rice according to instructions

2. Grind the salt, black pepper, Chinese five spice and yeast extract into a container, followed by the cornflour and mix altogether. Add the tofu and place the lid on. Give everything a good shake until the tofu is covered. If any of the mixture is left over sprinkle over the tofu when frying.

3. For the last 8 mins until the rice is cooked, add the oil into a large frying pan on a medium heat and fry each tofu cube until lightly golden.

4. Drain and serve the rice into two bowls followed by the tofu. Spread over the spring onions and sesame seeds on top!
