1. Pre heat the oven to 180 degrees. Place the potatoes into an oven dish and cover with 1 tsp of olive oil. Sprinkle the smoked paprika, salt and pepper all over and mix until all chips are covered. Make sure the chips are all flat and layered evenly and pop it into the oven for 40 minutes, turning each chip over halfway
2. Meanwhile in a large wok, heat 1 tsp of oil on a medium heat and fry the mince for 4-5 mins. Add the chipotle paste, chilli powder and garlic cloves and cook for a further 2 mins. Pour in the passata, red wine and black beans and season with salt and pepper. Bring to the boil and once boiling reduce the heat to simmer.
3. Once the wedges are cooked, share into 2 bowls topped with the mince. Sprinkle the cheese on top and finish off with a dollop of Greek yoghurt in the centre followed by the spring onion!
