Halloumi & Greek salad on flatbread

A beautiful spring Greek dish! Super quick & easy to make and low in calories!

Ingredients

• 2 tbsp balsamic vinegar
• 1 tsp olive oil
• ½ tsp oregano
• Pinch of salt & pepper
• 125g baby plum tomatoes, sliced
• ¼ cucumber, chopped
• ½ gem lettuce, chopped
• 125g halloumi, thinly sliced
• 4 tbsp 0% fat Greek yoghurt
• 2 flatbreads (I use Malted grain & Rye flatbread)

Method

1. Using a bowl, add the balsamic vinegar, 1 tsp of oil, oregano and mix together. Season with salt & pepper and tip in the rest of the salad ingredients, mixing everything together once again. Leave to one side.

2. Using a non-stick shallow frying pan on a medium to high heat, fry the halloumi for a couple of mins each side until golden. Spread the yoghurt evenly on both flatbreads and serve with the halloumi salad.
