A beautiful spring Greek dish! Super quick & easy to make and low in calories!
1. Using a bowl, add the balsamic vinegar, 1 tsp of oil, oregano and mix together. Season with salt & pepper and tip in the rest of the salad ingredients, mixing everything together once again. Leave to one side.
2. Using a non-stick shallow frying pan on a medium to high heat, fry the halloumi for a couple of mins each side until golden. Spread the yoghurt evenly on both flatbreads and serve with the halloumi salad.
