Ingredients

• 200g cool tortilla chips
• 120g reduced fat mozzarella, grated
• 40g red Leicester, grated
• 100g cherry tomatoes, halved
• 400g tin of black-eyed beans, rinsed & drained
• 1 small red onion, chopped
• Handful of jalapenos
• 3 spring onions, chopped
• 2 tbsp of 50% less fat crème fraiche

Method

1. Pre heat the oven to 180 degrees. Place the tortilla chips in an oven proof dish overlapping slightly.

2. Sprinkle half of the cheese evenly over the chips, followed by the cherry’s, beans and onion, then finish off by adding the rest of the cheese on top of the vegetables.

3. Place in the oven and cook for 5-10 minutes until the cheese is melted and bubbly.

4. Remove from the oven and sprinkle over the jalapenos and spring onions. Add a dollop of crème fraiche in the centre of the dish and serve immediately.
