Hoisin-glazed tofu & rice

A Chinese recipe, keeping it simple but delicious! A vegan dish that’s low in calories but high in protein!

Ingredients

• 120g brown rice
• 280g tofu, drained & sliced into wide strips
• 2 tbsp hoisin sauce
• 1 tsp sesame seeds
• 1 tsp sesame oil
• 1 tbsp ginger, grated
• 1 garlic cloves, crushed
• 1 red chilli, sliced
• 4 spring onions, finely sliced
• 100g tenderstem broccoli, blanched & chopped
• 25g soya beans, blanched
• Pinch of salt & pepper
• 1 tsp soy sauce

Method

1. Cook the rice according to instructions, this should take around 25 mins.

2. Pre heat the grill to a high heat. When the rice has 15 mins left to cook, place the tofu onto a baking tray and brush the tofu pieces with 1 tbsp of hoisin sauce followed by sprinkling over half of the sesame seeds on top. Grill for around 6 mins until golden & crisp. Remove from the oven, turn over the tofu and glaze over another tbsp of hoisin sauce on top and add the remaining amount of sesame seeds and grill again until crisp.

3. Whilst the other half of the tofu is cooking, in a large wok add the sesame oil on a medium heat and fry the ginger, garlic and chilli for 3 mins. Add the spring onions and fry for a further 2 mins. Blanch the broccoli and soya beans and transfer them over into the wok followed by the cooked rice. Give everything a good mix and season with salt & pepper and soy sauce.

4. Serve into 2 separate bowls topping with the tofu.
