A simple but classic Mediterranean dish! Super easy to make and low in calories!
1. Cook the quinoa according to instructions, this should take around 20 mins to cook.
2. Pre heat the oven to 180 degrees. Place the peppers on a baking tray cut side up and drizzle 1 tsp of oil over and season well with salt & pepper. Roast in the oven for 15 mins
3. Whilst the peppers are cooking, add the remaining amount of oil in a pan on a medium heat and fry the courgette until softened.
4. Once the quinoa is cooked, drain and transfer into the pan with the courgette, followed by half of the feta cheese. Mix altogether and season well with salt & pepper. Cook for a further 2 mins.
5. Remove the peppers from the oven and divide the quinoa mixture into each pepper evenly. Add the rest of the feta cheese on top of each stuffed pepper and place back into the oven for a further 5 mins.
6. Serve with the salad on the side!
