Spicy roasted pepper linguine

A quick and easy tasty dish! This recipe is the perfect mid week meal! With a slight kick, but bursting with flavour!

• 2 red peppers, diced
• 1 tsp olive oil
• 30g walnuts, broken into small pieces
• 2 small garlic cloves, crushed
• ½ tsp chilli flakes
• 150g linguine pasta
• 20 pecorino cheese, finely grated

Method

1. Pre heat the oven to 180 degrees. Roast the diced peppers for 15 mins. Once roasted leave to one side for a further 5 mins to cool.

2. In a food blender, add the peppers, oil, walnuts, garlic and the chilli flakes and blend until smooth.

3. Bring a pan of water to the boil and cook the linguine according to instructions. Drain and tip the pasta back into the pan on a low heat followed by the pepper sauce. Slowly heat through. Serve into two separate bowls followed by the cheese on top!
