A healthy veggie version of fish cakes and chips from a chippy! Containing 5 of your 5-a-day!
1. Pre heat the oven to 180 degrees. Place the potatoes into an oven dish and cover with 1 tsp of olive oil. Sprinkle over the smoked paprika, garam masala and salt and pepper and mix together until all chips are covered. Make sure the chips are all flat and layered evenly. Place in the oven for 40 mins and flip the chips halfway through.
2. Meanwhile, in a large bowl mix the flour, baking powder, cheese and breadcrumbs together. Add all the vegetables and toss to combine, make sure everything is coated with the flour mixture.
3. Crack the eggs in a small bowl and whisk. Pour over the veggie mixture and add to a food blender.
4. For the last 18 mins before the chips are cooked, add 1 tsp of olive oil in a large non-stick frying pan on a medium to high heat. Using a large spoon or scoop, scoop out the veggie mixture and place it on the frying pan, flattening each cake with your spatula to form a patty. Cook for 6-8 mins each side turning down the heat if they begin to brown too quickly. If the cakes split, remould them back together using your spatula.
5. Remove the chips from the oven and serve your veggie cakes and chips on 2 separate plates!
