Ingredients

– 150g uncooked Napolina whole wheat spaghetti
– 2 free range eggs
– 2 tbsp soft ricotta cheese
– 1 garlic clove, crushed
– Pinch of salt & pepper
– 36g of sundried tomatoes, chopped in small chunks
– 50g baby spinach
-Handful of fresh parsley, chopped

Method

1. Cook the spaghetti according to the packet instructions

2. Crack the eggs into a small bowl and beat them with a fork. Stir in the ricotta and garlic and season with salt & pepper

3. Once the spaghetti is cooked, drain and return to the pan on a medium heat

4. Stir in the egg & ricotta mixture as well as the spinach, sundried tomatoes and parsley and toss everything together until the spaghetti is completely coated

5. Share between bowls & serve immediately
